Monday Menu Share!
This is my favorite chicken recipe! I love to menu share. This is my favorite chicken recipe which I make it in the instant pot. It also does well in the crockpot. The longer I cook it, the better it tastes! When I use the instant pot, it is possible to use frozen chicken. It is a good recipe to make when I’m busy or out of the house all day. I can make it the night before, and add it to the machine before I leave. Or in the Instant Pot when I get home because it doesn’t take long to cook. It is one of my favorite recipes for the menu share!
Ingredients
4-6 chicken breasts.
1-2 cups cream cheese
1 cup shredded cheese of choice
1 lg can diced chilis
2 cans of rotel tomatoes
1-2 cups salsa
(1 can drained black beans. I do not use this anymore due to my diet, but it is a nice touch)
garlic and spices of choice.
Place all ingredients in pot. If using the Instant Pot, add a little salsa to the bottom then add the chicken and remaining ingredients. It doesn’t really matter how to add ingredients to the crockpot.
If using the Instant Pot, cook on high pressure for 6 minutes fresh or 10 minutes frozen. (Add a few minutes if you are cooking more chicken.
If you are using the crockpot, cook on low for 6-8 hours.
Serve over rice. I serve over Cauliflower Rice. Yummy!
